Pittsburgh Rare
Temperature range: 120°F - 130°F (49°C - 54°C) Characteristics: Charred exterior, cool or warm red center, soft texture
Medium Rare
Temperature range: 130°F - 135°F (54°C - 57°C) Characteristics: Warm red center, firmer than rare, more browning
Medium
Temperature range: 135°F - 145°F (57°C - 63°C) Characteristics: Warm pink center, firm to the touch, more browning and charring
Rare
